During those hot summer days, everyone craves fresh, light, colorful, and simple foods. Panzanella, a bread salad mixed with fresh tomatoes, basil, olive oil, and vinegar, is a traditional Italian summer dish. You may even find a few creative varieties of panzanella like salmon panzanella or melon panzanella, which uses sweet, ripe melon instead of tomatoes, plus peppery arugula, and a touch of sizzled prosciutto to complement the taste of the melon.
Summer in Italy is also the time to enjoy stuzzichini (“little teasers”) or assaggini (“little tastes”) – appetizers! These appetizers are usually vegetable- or fish-based and served cold or at room temperature, sometimes accompanied by a cold, fruity white wine. In addition, don’t forget about la insalata di riso (rice salad) with ham, peas, marinated artichoke hearts, roasted red peppers, and any other fresh ingredients you like!
